Reviewed spring chicken roll-ups with lemon dijon pan sauce

OMG, and I hate that saying but it fits great with this wonderful dish. My hubby likes to eat his traditional food and is hard to convert to what he calls fancy food. I made this a couple of weeks ago for him and he loved it. So today is his birthday and I asked him what he wanted for his birthday dinner and guess what he chose. You got it, this recipe....

Instead of prepared mustard I used dry mustard 3/4 to 1tsp. I kept eggs in separate bowl since I was serving it the next day and didn't want the egg to overpower with smell. I like a little extra green pepper also. I always love Paula's recipes and always change things up a bit because I'm a pinch of this, pinch of that cook and I think Paula know"
