For some reason mine came out like... paste! :( I Drained the cauliflower and used about half a darn roll of paper towels to absorb all excess liquid... I'll try again, but will steam the cauliflower to cut down on water absorption and use a potato masher instead. And will add more salt. And garlic. Because it lacked in flavor as well as texture!

i agree! And I drained and pressed the water out of the cauliflower like crazy.. went through about half a roll of paper towels! lol! It came out like glue... :/ I'm determined to get mashed cauliflower right though, so I'll try again but I may just steam them (less watery maybe?) and use a hand masher instead.

Awesome! :) my first attempt at tempura and I am pretty damn happy with it :) I added some garlic powder and pepper, but can tell you can herb_this batter out in a zillion ways..
