Reviewed pork wellington with greens and grapes

The flavors are great, but the recipe is horrendous in terms of cooking the pork. I followed the recipe exactly, and my 1.5lb tenderloin was almost raw in the center. In fact, after 25 minutes in the oven, only the one-inch tip was edible. I think the tenderloin definitely needs to be cooked a little before getting wrapped in dough.

Like others have noted, this recipe requires a bit of tweaking. I doubled up on the water and OJ, using 1/2 cup of each. I also cut down on the spices by reducing the cinnamon to 1/4 tsp and the salt to a pinch. Since the idea of vegetables is usually to eat something healthier, I also split the butter between 2 tbsp unsalted butter and 2 tbsp Parkay.

The recipe is tasty, but I agree with other reviewers on the proportion of ingredients. Maybe my package of wonton wrappers is just smaller than other people's. I chopped up about 13oz of ham and 12oz of Swiss cheese. Using about double the requisite amount of filling, I made 30 ravioli and still had about half of my filling left over. Tomorrow it's...
