Reviewed Dry Aged Prime Rib Roast

"Well, I wussed out last night. I've been aging this roast and was supposed to cook it on Xmas Eve, but it was smelling up my fridge. I was getting scared that I'd be serving rotten meat to all my guests. The ends of the roast were looking brownish. And did I mention that everytime I opened the fridge all I smelled was going-bad meat? So I cooked it last night (in an effort to poison only my husband and I and not our whole party on the big night) and I will buy a whole new roast for our big dinner. With all that said-- it was delicious!! I cut off the brownish ends, cut off the hard ugly fat and cooked it up just like the recipe said. I used a probe set for 135. It's absolutely delicious and we both feel fine so I assume the meat was still good. I'll make soft tacos tonight out of the meat. So next year I will age it for about 6 days and have faith in Food Network and 63 reviews. And now I will start scanning the weekly ads for a good deal on a whole new roast...:-)
