SO GOOD. Used a jar of roasted red peppers instead of roasting fresh peppers. Omitted the fresno by mistake but still delicious.

Great recipe! I used frozen butternut squash that was already cubed, cut the prep time down drastically! Squash holds up nicely and doesn't need to cook as long.

I baked these on a baking rack over a pan so the air could circulate. Forgot to put salt on the zucchini to draw out the water as suggested, but they were't soggy..just not crispy.
