"I cut the recipe in half as well. I used the juice and zest of one whole lime. I liked the flavor but could be overpowering to some so it wouldn't hurt to cut back on the juice a bit. I also had to use about two cans of chicken broth to get the rice cooked. I thought it was deliscious!"
