My Activity

Reviewed Grilled Swordfish Skewers with Coconut, Key Lime and Green Chile Sauce

"I made pan-seared swordfish steaks, instead of the kabobs. Before pan-searing them, I carmelized some shallots. They were great with the steaks. While I really like the sauce in this recipe, once I put in the oil, I hated it. So, my advice is if you don't mind a thinner sauce, don't put in the oil and it's delicious. "

Reviewed Pumpkin Gooey Butter Cakes

"Delicious pumpkin dessert! I knew from just looking at the recipe that 1 lb of powdered sugar would be way too much, I cut it in half. I also used the lesser fat, Neufchâtel, cream cheese. I baked mine for 50 minutes and it turned out perfect. ""

Reviewed Chocolate Cherry Trifle

"Made this for Christmas dessert this year, and it was a winner! Delectable custard, WOW. You could have the custard and whip alone and it's soooo soooo sooo good. The only thing I'd change is to make my own pound cake. My purchased pound cake not fantastic, turned out it was kind of dry. Also, I'd spread more of the jam in between the layers. Also, my custard took a good 30 minutes of constant stirring to thicken. I would definitely give yourself plenty of time to make the cake and the custard. It's totally worth all the effort. Absolutely divine!!
