Reviewed Portuguese Chicken, Lemon and Mint Soup

"I made this in the crock pot instead of on the stove top. I needed to cut the recipe in half based on the amount of chicken I had. I might have mis-measured the lemon and mint because I could barely taste those flavors. Over all 2 out of 3 people in my house liked it and true to Emeril's style, this soup had a "BAM!" to it, thanks to the red peppe"

About Me

I got a gift subscription to the magazine last year and got hooked. I used to enjoy cooking but am now starting to love it! I like easy recipes which include side dishes and beverage pairings, because I'm still learning this foodie stuff and it is so much fun!

I cook for my human family and sometimes our pets too. It is a challenge sometimes to find meals that all of us humans will enjoy because it seems like we each have such different favorite foods! 

I wear many hats- wife, mother, student of veterinary technology, and mini zoo keeper ;)

What is your favorite food to cook?
I like to make good use of my crock pots and the countertop grill and griddle.

What dish are you famous for?
Probably candied yams

What is your favorite restaurant?
The first two which come to mind are Olive Garden and The Cheesecake Factory. I also really like Texas Roadhouse.
