Loved it!

Reviewed Corn and Tomato Soup

Nov 19, 2013 on

It's an easy soup to make but there are better recipes out there. I do like the fact that it's not made with fattening cream. I didn't get any rave reviews from my family. It's just a basic, unexciting soup.

Reviewed Broiled Tilapia with Mustard-Chive Sauce

Nov 19, 2013 on

This recipe is good but not amazing. My family liked it but didn't rave about it. The sauce his a sweet taste but definitely benefits from an extra 1/2 teaspoon of mustard. If you feel your sauce is too chalky tasting you need to add more lemon juice but I wouldn't add as much as called for in the recipe.

I added sun dried tomatoes, broccoli and artichoke hearts to the recipe. Everyone loved it, even my son-in-law who thinks vegetables are evil.

Reviewed Parmesan Butternut Squash Gratin

My husband took everything offered for dinner except this dish. When my 6 kids started saying, "ooh, this yellow stuff tastes like candy" and "Mmm, this is sooo good. I';m gonna get seconds" he promptly took a helping and loved it! Melt the butter in a big pan so you can just dump the butternut slices into the pan to better coat the slices. H...

Reviewed Eggplant Parmesan Meatloaf

Nov 11, 2013 on

WOW! My family of 10 raved! They even devoured the eggplant and now think they love eggplant! I cut the salt back to 1 teaspoon and broiled the eggplant to cut back on the fat. I used low-fat ground beef and had no problem with grease.

Nov 7, 2013 on

The sweet with the couscous just didn't blend right. Could use less couscous and more flavor.

Reviewed Massaged Kale Salad

May 8, 2013 in Food Network Community Toolbox on

Use a food processor and pulse handfuls of kale to speed up the cutting process and reduce the amount of time massaging the kale. I only used 2T olive oil total. Using olive oil doesn't negate the fact that it is still oil and loaded with calories. Let's keep our kale healthy! Took this to a luncheon and women asked for the recipe knowing that wit"

It's a llittle lacking in taste. The addition of olives or sundried tomatoes would give it that extra kick."

Very flavorful. I substituted asparagus for the green beans. My husband, who shies away from veggie dishes, had two helpings. "

Reviewed Parmesan-Crusted Pork Chops

Mar 8, 2013 in Food Network Community Toolbox on

You know it's a keeper recipe when the men in your family try to stab anyone that comes near their pork chop for "just a little bite". I had to turn the pan heat down to medium-low in order to not experience burning the chops."

I had to keep putting these back in the oven. I cooked them an additional 30 minutes and still they were gooey enough to not be able to hold in your hand! They will pull away from the side of the pan but still won't be cooked through. The taste is not that great either. This recipe will not be a keeper."

This is comfort food. Easy to make and tastes great. I didn't need to add any of the salt called for. This dish serves four but I would change that to eight."

Reviewed Old-Fashioned Holiday Glazed Ham

Jan 4, 2013 in Food Network Community Toolbox on

This is a simple ham recipe. I gave it four stars since it doesn't stand out amazingly. The glaze is good. The pineapple rings are pretty but not necessary for the taste. But the secret to good, juicy meat after cooking is to pour some of the juice from the pan over the meat."

Reviewed Autumn Potato Gratin

I added some flour to the cream after reading other's suggestions and was glad I did. The cream thickened but was still plenty "runny". I did not boil my potatoes first, as was also suggested, but i did have to leave this dish in the oven for a good 40 minutes longer (I was making a doubled recipe) and even popped it in the microwave to speed it u"

Reviewed Pumpkin Cheesecake

Nov 8, 2012 in Food Network Community Toolbox on

This cheesecake was really lacking in a good pumpkin flavor. I would increase the spices if I made it again. It just didn't have a taste that made it stand out. Also, the graham cracker crust was too thick for a 9" pan. You could easily get a way with using an 11" pan as the cheesecake itself is quite tall or I would decrease the crumbs to 1 1/4 c"

Reviewed Herbed Spaghetti Squash

My kids like spaghetti squash but this didn't fly with anyone in the family including the adults. Even with the spices it missed the tasty mark.
FYI: pierce the skin a few times and cook the squash in the microwave to cut the recipe time by more than half.
