Good, but not good enough for so much work. The pork requires much longer cooking in order for it to be pulled apart with a fork. And as usual, pulled pork itself needs much more flavoring after pulled apart than beforehand. The mashed potatoes and parsnips are good, can't really taste the parsnips though. Not sire what the plan was for leftovers...

I made this and had a hard time getting the potatoes to cook soft enough - I even added more liquid. I used the Russet potatoes, maybe next time I'm pre-cook them a little bit. Good idea for peppers though.
