I have never made meatloaf before and this was delicious! I did make several changes. I bought 1 pound of lean ground beef and 1 pound of the chuck. I used beef broth instead of chicken. I only did one onion and added one red bell pepper. I also added a bit of Parmesan as others had suggested. And I didn't use the pan of water underneath as she does...
