"Wow! These are excellent. The lemon flavor is perfect. I keep lemon zest and fresh lemon juice frozen in my freezer, so I didn't know how much juice and zest 2 lemons would make. For that reason, I bought 2 lemons and made a note for next time. For those of you who do the same thing, please note that the zest of 2 regular size lemons = 1 heaping T"
Reviewed Carrot and Pineapple Cake
"I love this recipe. The addition of fresh pineapple really completes the cake. I add pecans instead of walnuts and that is the only change I have ever made to this recipe. Always turns out moist and it receives great reviews from my family. The prep time takes more than 10 minutes if you grate your own carrots and prep the pineapple. You could always buy grated carrots and pre-cut pineapple but I never do. I don't mind doing all the prep myself since this cake it so awesome! Also makes great cupcakes if you place them in tulip wrappers.
