Reviewed Roasted Pork Enchiladas

"Well I altered this recipe a lot due to others comments and it was PERFECT. I season, brown and then slow cook my pork in apple juice. My husband is allergic to poultry so I used a large can of Chile Verde sauce instead of chicken stock added the onion added lots of the cilantro and some garlic blended it husband hates onion so had to hide it. That was the sauce and the filling to mix in with the pork it was delicious. I guess it is quite far from the recipe but it turned out great. I also topped it with cheese yummmm!! I have made it several times now.

Reviewed Butternut Squash Soup with Fontina Cheese Crostini

"Great easy to make fall/winter soup. I used veggie stock instead of chicken so it was vegetarian. I have made this soup several times now and I have used different types of winter squash from my garden each time such as Hubbard, Sweet meat and Butternut. It always turns out wonderfully! I have added a couple garlic cloves as well with the onion gives it that garlic flair I love and I have made it with a pinch of cinnamon and sugar at the end made it sweet and savory. The crostinis work great with mozzarella as well. A great soup to play around with!
