This was really good. The sweetness of the squash paired with the smokey salty of the sausage was really good. The wild rice gave it extra texture and added health benefits. it does make a little much for our family but I would make again. I made this for my hubby, dad and MIL and everybody loved it! It does take awhile to prepare so plan on lots more time then stated. I ended up using two large and one small eggplant and had a few pieces left over.
