I made this for my hubby, dad and MIL and everybody loved it! It does take awhile to prepare so plan on lots more time then stated. I ended up using two large and one small eggplant and had a few pieces left over.

This was a great side dish for the fish I was cooking. This is a great base recipe that can be tweeked with different veggies like mushrooms or even squash. This sure beats standing at the stove and stiring. I will for sure make this one again.

I thought this was a good version of SP... However my hubby and family did not like it cus it was too "fancy". This is really a warm dish and would be great in the cooler months as the cinnamon gives it that fall flavor. I will not make this again only because my family didn't like it.

I thought this was good but not sure I would make again. I think there was way too much onion for this recipe and the cheese sauce was a little bland. I also thought there was too much vinegar in the recipe. The chili salsa was good but I have a better recipe. I also thought the burger itself was bland and we cooked ours on the grill.
