Reviewed mexicana meatloaf with cilantro pesto and crispy tortilla strips

May 5, 2014 on FoodNetwork.com

The Cilantro Pesto is amazing!! I didn't make the meatloaf, just the pesto. Let me say, I was going to make the meatloaf - I even bought all the ingredients! But then I got the idea to put the cilantro pesto on top of grilled fish. So amazingly delicious! I plan to try the meatloaf later, but if you don't make anything else, MAKE THE CILANTRO PESTO!!...

Reviewed Veal, Pork and Porcini Bolognese Sauce

Wonderful! I have made this sauce several times, and it is always delicious. We've served it. With gnocchi, homemade pasta, and ravioli. Can't say enough good things about this recipe! And as someone else mentioned, the porcini mushrooms MAKE this dish. Can't skip those! :)

Reviewed Spanish Cranberry Sparkling Martini

Dec 29, 2013 on FoodNetwork.com

I pretty much just used the cranberry vodka recipe. I tried it with sherry, but I didn't care for it. The final recipe I came up with was the cranberry vodka with a splash of OJ, shaken, then poured into a chilled martini glass. Then I floated a little prosecco on top. Yummy! :)

Reviewed Cooked Cranberry and Orange Relish

Nov 27, 2013 on FoodNetwork.com

Very tasty! I added some Grand Marnier and probably cooked it a little longer than the directions stated. Toward the end, I added a few more fresh cranberries to have more of a variation in texture. I also added a little ground sea salt. This recipe is definitely a keeper! Thanks!!

Good, but here's a suggestion: Season the veggies before you layer them. I added salt and pepper on each layer before putting it together and even seasoned it all again just before covering it. Still, once it was ready, it needed more salt. Also, the sauteed onions and garlic added so much flavor! Next time, I might even try a light layer in bet"

Reviewed Lemon-Garlic Shrimp and Grits

LOVED this. Followed someone else's advice and added Old Bay, and also added Tony Chachere's Cajun seasoning. Also added extra flat leaf parsley to the grits. SO easy, and SOOO GOOD! I will definitely be making this again! Oh! and serve it with sourdough bread and butter. Very good!"

Reviewed Grilled Tuna with Olive Tapenade

Feb 27, 2011 in Food Network Community Toolbox on FoodNetwork.com

The olive tapenade was good, but I don't know, the flavor of it was very strong. I think it might go better with chicken. We had charcoal grilled tuna steaks, and they were good, but I was glad I only put the tapenade on the side because otherwise I wouldn't have even been able to taste the tuna at all. I would make the two things again, but separately....

Reviewed Pan-Seared Shrimp with Romesco Sauce, Creamy Grits, and Greens

Jan 22, 2011 in Food Network Community Toolbox on FoodNetwork.com

It was good. I will say that I don't think that it was so good that I'll be craving it again sometime in the future. I liked the Romesco sauce, so I would probably make that again to go with chicken or shrimp. But it was a lot of work without the big "Wow that's the best thing I ever ate" payoff. Still good, though.
