Reviewed Red Velvet Whoopie Pies

"I just made these as Valentine's Treats for my daughter's teachers. They are very delicious. I'd call them Red Velvet Cookie Sandwiches though, as the red velvet has much more of a cookie consistency. It's not as soft and moist as a traditional whoopie pie. I agree with a comment below about sifting the flour. I also added in more confectioner's sugar than was called for in the icing. I will definitely make these again!

"I'm addicted! I can't stop making this. First off all, the chicken itself is so juicy and tender. I don't use all the dressing...I make about 1/2-2/3 of what is called for..but it is absolutely delicious. I add the cashews and raisins just before serving. So good!

"This was a great addition to our Thanksgiving menu. I added some cinnamon to the recipe to give it a more traditional flavor. I had trouble with the praline topping...first attempt, it taste burnt...second and third attempts, the sugar crystallized. I used more water, 1/4 cup, and it worked great. I really enjoyed the flavors.
