Reviewed Mac 'N Cheese with Bacon and Cheese
"Megpanda-once you have the smooth milk mixture, take it off the heat. Then add the cheese slowly, a little at a time, waiting to add more until the last addition is fully melted. This will keep it from getting gritty. You are probably adding the cheese while it is too hot and adding too much at a time.
