This recipe is really good. I made it just like it's called for in Emerils recipe. My second try at it, I doubled the Italian Seasoning and Basil, as my family likes "spicy". I don't see anywhere that Sandra claims this is an "authentic" Cuban recipe. It's her "take" on the recipe. Here in America there are all kinds of international foods that are "tweaked" the way the cook wants to make them. Don't be so critical "The Cuban". Who knows, maybe this recipe is better than the authentic Cuban dish. Everyone's taste...

Best Pork Roast I've ever made. Usually if I bake it in the oven, it comes out too dry. This one was easy and the GRAVY is excellent. My husband and I really enjoyed this one!!

I made this tonight and it is really GREAT. After one bite though, I decided to add about a Tablespoon of sugar, to take the edge off the tomatoes. Other than that......it was PERFECT. Easy and good...........my kind of dish!!
