Very good salad. I would recommend a little less mayo and a little more buttermilk for the dressing. It's pretty thick if you stick to the recipe and we preferred it a little more thinned out. Otherwise, the flavors go very well together. I also would recommend a higher quality olive oil for the croutons, otherwise they will be a little too greasy....

Delicious! We tried it for a different sweet potato recipe for Thanksgiving this year and it was fabulous. Even the non-sweet potato fans thought it was good. You could have it as a side or maybe even dessert (or both. Love it - Thanks Paula (and Aunt Peggy).
