just in case you do decide to use the sauce in the future. it is El Pato sauce not El Paso. At least that is what is in the recipe.

my guess is you didn't add the additional cornstarch/water mixture that is not listed in the ingredients but is in the instructions.

I have made this cake twice and it was a HUGE hit both times. The first time I shredded the carrots and I think I packed the measuring cup too full. It was still very good but I think too much carrot. I also cooked it the whole 40 minutes. It was slightly dry, but better the next day.
