You probably cook them to too high of a temperature which pushed the caramel past the soft ball stage to the hard ball stage. Make sure to use a candy thermometer and only boil the caramel to 248 degrees, then pour immediately into your pan.

Turn up the heat on your burner a little bit and it will not take 25 minutes to reach 248. It also sounds like you cooked the corn syrup misture a bit to long too. I never allowed mine to get "brown" but just a little bit golden. This literally cook 5-7 minutes. Also, make sure to grease your paper and only use parchment paper, not wax paper!

I have made these twice in the last 3 days (because they are that good!) and they turned out awesome both times! One word of caution though, make sure to only use parchment paper to line your pan. The second time I made them I decided to use wax paper instead which was a huge mistake. Both times I made them I greased the pans with a bit of veggie...

Get new red pepper flakes! Spices do not last that long and lose flavor over time. Many groceries sell bulk spices in little plastic bags. They are much cheaper since u are not paying for the glass bottle. Just add them to your old empty (and cleaned) red pep bottle.

Probably would work but cooking time may need to be longer so that the center gets completely baked through. Also, maybe lower cooking temp a bit to accommodate longer cooking time (don't want to burn them or have edges get dried out.)

Exactly! People, stop rating recipes you either have not made yet (but it looks good or bad to you) or recipes you have altered so much that you are no longer making the "actual recipe" as written! It's annoying and helps no one.

umm... these are awesome! I baked them in an 9x9 inch pan for 25-27min at 400 degrees instead of doing muffins. Turned out great. Moist, flavorful, my go-to cornbread recipe from here on out."

Didn't have Framboise so left it out. I've made this dessert 3 times in the last week for various events, it's that fantastic! Thanks Ina! Oh and the last time I made it I added a light sprinkle of sea salt on top of the pudding before I baked it. The salt added a new dimension of texture and flavor. So tasty!"
