Reviewed chorizo and goat cheese quiche

So so so good!!! I used Marie Callender frozen pie crusts as well - could have definitely split the ingredients between both pie shells and made two. will definitely make again!

Reviewed baked farro and butternut squash

Nov 8, 2014 on FoodNetwork.com

Delish! I didn't have faro so I used barley. It came out great! While I love me some bacon, I will probably use half that next time for the sake of my arteries. I'm sure Turkey bacon would be good too. I will also use less salt - probably half - because it came out pretty salty. Definitely going in the rotation!

Pretty good. We needed to add hot sauce. Might also try with shiitake mushrooms instead of spinach next time for a different texture.

Reviewed shredded spicy chicken tostadas (tinga)

Oct 30, 2014 on FoodNetwork.com

Ok, this was seriously amazing. Used canned diced tomatoes, pre-cooked chorizo sausage (couldn't find loose raw sausage), and chipotle "sauce". Also had some on tostadas and some on small tortillas. Sliced avocado on top. Messy but oh so good!!

Reviewed rigatoni with swiss chard and sausage

Oct 29, 2014 on FoodNetwork.com

Wow. Very yummy. Not a big fan of lemony dishes, so I only added the zest of 1 lemon and it was great. Next time I will use more chard - and it would probably be really yummy with spinach or kale. Definitely going in my rotation.

Reviewed dirty p's garlic-ginger chicken thighs

May 18, 2014 on FoodNetwork.com

Based on other reviews, I made some adjustments. Instead of orange juice, I used rice wine vinegar. I didn't have skin-on boneless thighs, so I used boneless/skinless. And I added olive oil to the marinade. The result was an amazing, delicious, healthy meal that is going in my rotation. 5 stars!!

Really yummy. And super easy. Got this recipe out of the Food Network Magazine and now can't wait to try some of the others with different cheeses. Yumm!

Sooo good and EASY. Hubby went back for thirds. Really really tasty. Served with a very simple salad. Awesome, and will totally make this again and again and again!

Oh my, was this Delish! So so good and super easy. Served it with some garlic Nan from Trader Joe's. Will definitely make again.

Reviewed chicken tikka masala

Jan 24, 2014 on FoodNetwork.com

I was excited to make this - hubby and I love Indian food! and there are no restaurants near where we live. I don't remember a time when I just stopped cooking mid-recipe, but I did with this. Maybe it is my blender, but how are you supposed to make a paste when you only have dry ingredients? It was chunky - the ginger was not blended at all. ...

Reviewed Kale-Turkey Rice Bowl

Jan 13, 2014 on FoodNetwork.com

Super yummy. I only took out half the seeds from the jalapeo, so it had a really nice kick to it. Will definitely put his in the rotation.

Dec 22, 2013 on FoodNetwork.com

Super tasty. Made a few alterations...used beef broth (5 beef bouillon cubes and 11.5 cups if water), one kielbasa (cut into quarter inch circles then quartered, and browned) and about a cup and a half of the elbows. Delish!!

Reviewed Middle Eastern Chicken and Rice

Dec 20, 2013 on FoodNetwork.com

Really yummy. The rice is awesome - but I had to increase the water to 3 cups and the time to 20 minutes, just to make sure it cooked. Will definitely make it again!!!

Reviewed Chicken and Beef Fajitas

Dec 20, 2013 on FoodNetwork.com

Wow - fantastic Fajitas!!! I think the marinade makes the dish. ONly did the steak, but will DEFINITELY make this again with chicken. Also made the Fiesta Beans - but halved the recipe and I still have A TON left over. They were good, but I don't know that I'll make them again. I might do yellow rice with the fajitas next time.

Reviewed Fiesta Beans

Dec 17, 2013 on FoodNetwork.com

On their own, they are ok. But served them with Ree's Chicken and Beef Fajitas and they didn't stand up to the marinade on the meat - kind of became bland. Don't know that I will make them again. I couldn't get a ham hock so I used a smoked turkey leg. I also halved the recipe because I am not feeding 20 cowboys, and I still have A TON left over....

AMAZING. I added 2 TBSP flour to the 1/2 cup in the brownie mix, and still used the 2 TBSP in the chocolate chips. Brownies baked perfectly in 35 minutes. Delicious, and will definitely make these again! "

I read so much about the icing I decided to make it and see what all the fuss is about. It is super easy - but I beat the butter and sugar in my stand mixer on level 4 for about 20 minutes, scraping the sides often. The sugar crystals were significantly less, but still there. I added the milk/flour mixture and beat for another 10-15 minutes, ag"

These are really good and moist brownies. Hubby isn't a dessert lover and he had seconds! I only gave it 4 stars because the caramel was overwhelming. (Never thought I'd say too much caramel) I will use 40-50 caramel pieces next time and skip the pecans. Then it will be 5 stars for sure!!"

Reviewed Simple Perfect Enchiladas

Jan 21, 2013 in Food Network Community Toolbox on FoodNetwork.com

Absolutely delicious! Couldn't wait to have seconds! Hubby loved it too. I will definitely make this again. Makes lots of dirty pots, though. I used two 10 ounce cans of medium sauce and one 10 ounce can of mild sauce and the seasoning was perfect for our taste. Added yellow rice inside enchiladas and skipped the cilantro. Came out awesome!"
