I cooked mine at 475 degrees for 25 minutes and it was perfect. Made eggplant stacks with fresh mozzarella, basil, sun-dried tomatoes and a balsamic glaze. Also, the only eggplants I could get were fairly large so I peeled them before roasting. A sprinkle of toasted pine nuts would have given a little crunch, but the mouth feel was really yummy.
