"I used a Blue Moon Pumpkin ale, and an applewood smoked gouda... It was fabulous. My mother did say that she had to cut the thickness of it with milk a day or two later, but it was still delicious. THe first time I made it, I added 2% shredded... Don't do that-- Add Full Fat Cheddar or else the soup is a little grainy (but still delish!) I also di"
