Delicious - but this made way more than 4 servings - more like 8. Because the mousse is so rich and we had a big dinner planned I kept the servings smaller.

Made as written except I did cut the onion in half because I'm not a big raw onion fan. The onion did mellow quite a bit after sitting in the dressing. I would say next time I'll use 4 lbs of potatoes (I used 3 as there was too much dressing for my taste. That said, it was a fabulous recipe with a kick and not just boring mayonnaise dressed potat"
