This was delicious. So good in fact the leftovers completely vanished in one day. 1 chicken breast for son ate the other 3. Very good with butter lettuce salad blend and lemon vinaigrette salad instead of the thick tomato sauce. Wow this was tasty. I had 7 Japanese eggplants, and lots of tomatoes plus a zucchini that didn't get away from me. I used leftover homemade yogurt cheese instead of ricotta, Parmesan Reggiano and some pepper jack. bread crumbs to be had. I made my own marinara sauce out of the tomatoes. Reviewed Creamy Red Pepper Soup

This soup was delicious! I would recommend using a good Marsala....other wines might result in soup that's a bit sour. I also added 2 tbsp of tomato paste. I served this at a dinner party and my guests practically licked the soup pot...not a scap left.
