"I made this recipe two days apart as it was so good. First made it at the fire house and then at home after my family nummed down the leftovers. Instead of using olive oil, I just utilized the oil from the sun-dried tomatoes jar - this added a little more flavor. Also the second time around didnt even use the butter as it really didnt make a difference in the flavor, but just added more fat. (I also think you can skip the parmesan on the outside of the breasts if you want to reduce the fat a little more) Overall great recipe and simple to make!"

"Although it turned out great, I would say that I prefer the traditional stuffing over this, and I really missed the dark meat! Its a great idea though for those smaller get togethers.
