"Super easy and delicious. I'm always buying zucchini and then throwing them away when they get old & mushy. That will not happen again now that I've found a great recipe to use them in. "Fantastic! Wouldn't change a thing. I did use red wine vinegar because I like it and didn't have any champagne. Also used course dijon instead of the smooth Ina used on the video. Made the croutons out of a pre-sliced loaf of Trader Joe's cracked wheat sourdough bread, and it turned out great. Hubby and I both think this would be great to brin""
