Reviewed whole-wheat spaghetti with swiss chard and pecorino cheese

Apr 24, 2014 on

I had this for dinner last night. It was simple and delightful! I omitted the cheese and added some mushrooms to make it a meaty vegan dish. I also used toasted slivered almonds because it's what I had on hand, and not to mention, cheaper. I was very full and satisfied!

Yum!! I always make Ina's chicken stock, and her suggestion is to throw away the entire cooked chicken afterwards - No way! So, I shred the chicken and make this salad. It's so good. Next time, I'll add more almonds. It really adds a nice crunch.

Reviewed rigatoni with red pepper, almonds, and bread crumbs

Apr 12, 2014 on

This dish was excellent! The key here is to buy good quality croutons. For example, I bought mine from Trader Joe's that are made from sourdough bread and full of flavor. The red peppers are delicious. I added chopped kalamata olives. The only criticism I have is that it was too dry, so I added some reserved pasta water as opposed to more Olive oil....

Reviewed penne with beef and arugula

Mar 19, 2014 on

This was fast, easy, and delicious! I used less pasta, added shards of parmigiano reggiano, omitted the basil, and used 1 T Dijon + 1 T whole grain mustard. I agree with other reviews that 7 minutes is too long for the steak, so I cooked it for 5 minutes on each side. I also loved the sweetness of the balsamic vinegar, but if that's not your thing...

GREAT METHOD! It could use more seasoning. I nearly tripled the amount of seasoning salt. And it took about 3 minutes on each side, not a minute. I will definitely be making this again. Anyone have suggestions on what to do with the oil? I'm a newbie at frying, so I need help lol Thanks in advance :)"

Wow, so simple and so delicious! I made this vegan by omitting the cheese. I didn't add walnuts because I don't really care for them, and I used rosemary instead of thyme since it's what I had on hand. The sweet peppers go really well with the peppery arugula and lemony potatoes. I will definitely be making this again!"

Reviewed Baked Risotto

May 17, 2013 in Food Network Community Toolbox on

After reading all of the reviews, I decided to cook the risotto fully before putting it in the oven to ensure there were no hard pieces of rice. I boiled the rice and tomato sauce together then simmered, filled the empty tomato can w/ water and added little by little, stirred, and tasted until it was cooked risotto. Also, I halved the recipe. I di"

This soup is delicious! But I did make some adjustments...besides halving the entire recipe, I added 2 cups of chopped kale and 1 1/2 teaspoons of curry powder. I omitted the cheese and used veggie stock instead because I am a vegan. My husband is vegetarian, so instead of adding cheese (b/c we didn't have any) he added a dollop of sour cream and "

Reviewed Cajun Shrimp and Rice

Excellent! I tweaked this to my liking by marinating the shrimp in lemon juice, minced garlic, salt, white wine, and a lot of black pepper. I also added dill, cilantro, and sauteed onions. I omitted the butter and used brown rice instead of white for a healthier dish. Otherwise, I followed the recipe, and my boyfriend and I loved it :-)"
