"Wow, so simple and so delicious! I made this vegan by omitting the cheese. I didn't add walnuts because I don't really care for them, and I used rosemary instead of thyme since it's what I had on hand. The sweet peppers go really well with the peppery arugula and lemony potatoes. I will definitely be making this again!"

Reviewed Cajun Shrimp and Rice

"Excellent! I tweaked this to my liking by marinating the shrimp in lemon juice, minced garlic, salt, white wine, and a lot of black pepper. I also added dill, cilantro, and sauteed onions. I omitted the butter and used brown rice instead of white for a healthier dish. Otherwise, I followed the recipe, and my boyfriend and I loved it :-)"
