This cake turned out very light and airy. I didn't have orange extract in my cupboard, but will try the next time. I used good vanilla extract and it was heavenly. I just tried the recipe and although I figured out early on I needed a touch more flour, I agree you also have to use the right kind of potato. I'm not a person who likes a lot of fresh herbs in a sauce so I made a light cream butter sauce with a little butter, flour and chicken broth and it was perfect. This is a winner and crazy easy.""

I Love Love Love this recipe. Simple and so much more cost efficient than the store bought varieties. I used whipping cream instead of the heavy cream for that decedant end to a holiday meal. Thanks, Alton!
