These are a good side. I had them with panini's. They are easier to make than I thought onion rings would be and they're pretty tasty. I sprinkled sea salt on the onions before dipping them in the batter and that turned out well - I should have sprinkled them with both the paprika and the salt, next time I will. Really great appetizer. They're of course even better when still warm and the cheese is melty inside-but it's hard to serve and keep the right temperature for too long. I used an electric skillet since I didn't have a deep fryer and could set the temperature without having to keep looking at a thermometer in the oil.
