I find that if you want a less stringent vinegar, use rice wine vinegar. I would cook your roast less till your taste, use a thermometer, we like med to med rare and the thermometer leaves out the guess work.

cold water will do it like Kandy said, and also, there has been reports on the newer pyrex, not made in this country not being able to hold up in the oven or microwave, or pouring hot liquids in them. I have had small pyrex bowls, new ones that have done this pouring hot liquids in, and in the microwave heating something up. I don't have problems...

Wow Guy this was wonderful, I tried to stick with the recipe as close as I could, but did not have a few things. I love fennel but was out so used celery instead, I also did not have vermouth and didn't want to get it just for one recipe, so used my white wine, and added a half teaspoon of Chana Masala spice to that. one more note, put yumprint on your toolbar so it is easier to access right after you save it. You then click there and it takes you directly to your recipe box and you print from there.
