Reviewed Colcannon

"Mixed reviews in my house. Older generation loved, the younger not so much. The potatoes and cabbage were a bit of a hassle given the outcome. I think I'd tweek like the idea below to fry some bacon and sautee the cabage in the drippings. Overall good, havent tried the leftovers yet..."

Reviewed Trisha's Chicken Tortilla Soup

"Just ok for me. I had to add spice, it was too bland. So I put in some chipotle peppers. Also, I used 2 cups of 1/2 and 1/2 and 2 of skim milk. That part was fine, although I use just chicken broth for for other recipes and they taste great without the aded fat and calories...Perhaps the fajita seasoning was not to my liking?"

Reviewed Shredded Pork and Bean Panuchos with Pickled Habanero and Onions (Cochinita Pibil

"I liked the pork, pickled onions and peppers and paunches a lot. I do think it was a bit fatty and rendered a small amount after or the effort. My pork must have been on the fat side, and with the oil in the sauce, I had to skim a lot of fat from the sauce. As the pauchos also had some grease from frying, I found it all a bit heavy. Flavors ar"

Reviewed Chicken Parmigiana

"I liked this quite a lot. I wanted to do the second breading with panko and parm, but ran out of time. I used whole wheat pasta. I reduced the oil and drained mpst before making the sauce. The sauce was good for how simple it all was. Family loved, leftovers delish.""
