Reviewed Beachcomber Cookies
"This is quite different from my normal and amazing chocolate chip recipe, but I love these cookies just as much! I replaced half of the vanilla extract with coconut extract for some additional coconut flavor. Toasting the coconut and pecans really brings out a nice nutty flavor and extra texture. I'll definitely be making these again!"
Reviewed Curried Chicken Salad Sandwich with Almonds and Raisins
"This is an absolutely delicious combination. Only change I made was soaking the raisins in a little hot water before adding them to plump them up. Great meal idea - can try it so many different ways: in a wrap, on a bed of lettuce, just the way it is! ""
Reviewed Dark Chocolate Brownies
"I think this is a pretty good low fat brownie recipe (compare the butter/oil in this to the others on the FN website). However, you have to be very careful not to overcook the brownies. That is what really causes them to come out dry. I would have preferred to take them out of the oven with a moist toothpick, but waited until the middle was cooked and it led to a dry product. I'll freeze the leftovers and mix it with ice cream or in a trifle. Not to be wasted!
Reviewed Pumpkin Bars
"This recipe is amazing. I used slightly less than 1 cup oil and the dessert came out super moist. I would not recommend reducing the amount of cinnamon, but do add other spices (ginger, curry, nutmeg, or cloves as you desire. Baked in muffin tins (~21 minutes and one 8x8 glass pan (~30 minutes. Both came out great. Now I can bring half to a potluck and save the cupcakes/muffins for the playoff game tonight!
