It will be sticky until you add enough flour but if you add too much it will be dense, heavy and won't rise. My suggestion is to hand mix like he suggests, adding flour slowly. I think I went to 2.5 c by hand mixing. Then, even though it's still sticky, turn it out on your counter top. Add another 1 cup or so but resist adding more until you have...
