Reviewed Crustless Spinach Cheese Quiche
"I just took this quiche out of the oven and let it cool a few minutes before slicing into it. I substituted feta cheese instead of the cottage cheese that the recipe calls for, and the quiche had a firm texture that allowed me to slice it without having to refrigerate. This is the part of the recipe I don't understand. Why would anyone want to refrigerate quiche before eating it? To me, the flavor is best when the quiche is warm. I appreciate the fact that no crust is required since ready-made pie crusts often do not work well in quiches.
