This is the way to do it. Use leftover baked potatoes, or simply pierce raw potatoes with a fork, wrap in damp paper toweling, then a tea towel. Microwave for 5 minutes. Cube the potatoes, toss in a cast iron skillet with minced onion, some butter and fat (Duck fat is the best, but bacon fat is great too). Sprinkle with salt and pepper, or use...

This turned out great! I used a precut 20oz package from the store. I used 1 1/2 Tbsp of butter, 2 Tbsp of brown sugar, salt and pepper. I cooked it in a cast iron skillet to get great carmelization. I liked the super crisp small pieces mixed with the bigger ones. Keeper recipe! Thanks."

Made jasmine...

This recipe is not how it was prepared on the show. No blender is needed. I made it with 2 cans of Goya beans, 1 pinto and 1 small red. I sauteed onion and a drained can of Rotel tomatoes to soften the onion, then I added the beans and their liquid. Let that simmer for a few minutes and then got out my trusty potato masher and mashed to the consistency...
