This recipes is FANTASTIC! I used fennel as well as the carrots and onions, and since my roast was larger than the one in the recipe (almost 5 lbs.), I had to cook it longer. I cooked it in the oven on 325 in my dutch oven for about 2.5 hrs. The veggies were very soft by the time the meat was done, so hit the sauce with a stick blender before ...
