Reviewed Blueberry Crumb Cake

"I use all organic ingredients and sometimes omit the topping. In lieu of the crumbs, I created an organic berry frosting consisting of butter, cream cheese, powdered sugar and the strained juice from thawed frozen raspberries, blueberries and blackberries. The berry juice gives the frosting a beautiful color without the use of artificial food coloring and using frozen berries will produce a deeper color than fresh berries. My family loves it this way! If I bake the cake for 37-38 minutes it is absolutely perfect! I plan on experimenting and replacing a portion of the flour with whole wheat flour to determine if this alters the consistency and/or taste for a healthier alternative."
