Reviewed Foolproof Standing Rib Roast

"5 stars for ease!! 4 stars just because the directions were a just bit lacking. Should the recipe be adjusted for bigger/smaller roast (NO), does it need to be tented before serving (YES, does the second cooking start AFTER the oven reached the desired temp (YES)? I did not alter the cooking time at all for a 6.33lb roast, and did tent it, but I also used a meat thermometer to ensure perfection! pulled it out of the oven when it reached 125*, tented while I plated the rest of the meal, served at 130*. Also, I did not use Paula's house seasoning, sounded way to salting for my taste, used Penzey's Prime Rib Rub instead. PERFECTION!!!

I love this technique and will use every single time I cook a standing rib roast!! Thanks for such an easy and tasty recipe!!!
