Reviewed chicken-lentil curry soup

This recipe made our house fall in love with lentils. We used green lentils so the cook time was 5 minutes longer. That was our only deviation from the recipe as written. So glad my wife randomly picked this recipe out of the magazine.

Wife and I both loved it. Pretty much stuck to the recipe as written except we added a third tsp. of curry powder and used 2 serrano peppers instead of the jalapeno.

We have made this recipe many times now. It doesn't get any simpler. The flavors are absolutely amazing considering it doesn't simmer for hours. We have taken to adding 1/2 a teaspoon of red curry powder just for some extra kick. With two working parents in the house, quick, delicious recipes like this are such a treasure."

Very good, easy to make soup. We have made it multiple times and we now bump the rice up to 3/4 cup. The fresh lemon is what makes this recipe so refreshing. Also, it tastes even better reheated in lunches the next day. "

Very simple to make and it was delicious. We don't grown tarragon so we substituted the 1/4 cup tarragon for 1/8 cup of fresh basil. I served it with grilled, sliced chicken breast on top. Great week night dish. "
