This was very tasty. Nice and chunky as I used the diced tomatoes. The one thing I wish I did was left the eggplant baking a little longer. Or maybe I should have peeled the eggplant so that it cut a bit easier. Either way, for a first try, I think it went very well and I will definitely do it again.""
