Reviewed Penne with Treviso and Goat Cheese

"Oh! This was not my favorite and I love every other Giada recipe I've tried.

We used radicchio because we could not find treviso. We cut back the balsamic based on the reviews, but this pasta was too bitter. The first bite was good, but after that we couldn't stand to eat anymore.

I think I will try this again, but will use spinach or kale instead to see how that tastes.

Reviewed Mexican Lasagna

"Yumm-o! I made a couple of changes because I always like to make recipes mine. Plus I like my Mexican food to have a nice kick to it.

Add 4 small slices jalapenos to the chicken mixture when cooking (keep membranes and seeds)
Substitute 1 cup of medium salsa for the taco sauce/tomatoes
Substitute 1 can of ranch style beans for black beans

The ranch style beans have sauce in them which will help to keep the chicken mixture from drying out.

The jalapenos added a nice kick to the dish, and the salsa also helped with the spiciness. I served with Tapatio hot sauce and sour cream.

This was AH-MA-ZING. Can't wait to have the leftovers."
