Reviewed Salmon Cakes with Creamy Ginger-Sesame Sauce

"I think using fresh vs. canned salmon makes a world of difference! I had grilled some salmon a few days ago -- I decided on a more classic flavor profile of dill, a little bit of Old Bay seasoing, scallions and finely chopped celery. I divided the recipe to 1/3 (had 10 oz. of salmon - 2 slices of bread and 1 egg - and using a 1/4c measure, I was "

Reviewed Asian-Style 3 Bean Salad

"Great twist on the classic 3-bean salad. I omitted the Tbl. of sugar, and 2 Tbls. of the apricot jam - added 1 T of sesame oil, and 2 t of low sodium soy sauce - also 1 T of toasted sesame seeds -- Yummy! -
Will serve as a relish for cottage cheese - a great, healthy lunch or snack!"

Reviewed Devil's Food Cupcakes with Chocolate Icing

"In response to an earlier review, "healthy" does not necessarily equal "low/nonfat". The amt. of stabilizers, etc. added to "nonfat" foods such as sour cream are arguably less healthy than the very small amount of fat that would be dispersed in 8+ cupcakes from using low-fat sour cream. Non-fat cream, etc.-- are merely experiments in a laborator"

Reviewed Deep Fried Poached Egg Over Heirloom Tomato

"Surprisingly easy to make! To help white congeal closer to yolk, I also used Julia Child's trick of dropping whole egg in shell in hot water for 8-10 seconds before cracking - helped a lot!! I ate mine as part of a lyonnaise salad -- YUM!! Was wondering if the egg wash could be just egg white -- anyone try that?"
