Reviewed honey ricotta cheesecake

Great cheesecake. I have skipped the crust (had no time to make it), used 12 oz. cream cheese instead of 16 oz., full container of organic whole milk ricotta, 4 organic large eggs and organic/non-gmo honey. Didn't use sugar nor zest. Baked in a hot water bath.
*If you're skipping the crust like I did make sure to butter the pan on the sides...

This recipe is great. I made some substitutions, it came out perfect. It is a keeper.
I have used; 1 stick of butter and 8T (1 stick) of coconut oil, used a little less than a cup of brown sugar.
gluten, soy, dairy free chocolate chips (10 oz. total for the recipe)
didn't use any coffee
used all purpose gluten...

Love these cookies. I used all the ingredients exactly like in the recipe. The only thing I will do differently next time is to bake the cookies 8-9 minutes. I baked them at 375 for about 12-15 minutes and I feel they didn't turn chewy enough on the inside."

I have just made them for the first time using organic brown sugar in place of a regular sugar because I don't use white sugar at all. I also used cubed chocolate bar instead of chocolate chips and added a little more cocoa powder. They came out rich and delicious and not too sweet. I had them with organic whipped cream on top.

This is the best recipe ever. I just made the cake and the whole house smells wonderful. I used only 1/4 tsp of water for the icing and it came out to be a perfect consistency. I almost ate the whole icing by itself, it is so good. I didn't replace enything in the recipe. As always, thank you Giada.
