I watched the episode again....someone mentioned fennel in the rub...sooooo I did a little research and pulled up the recipe for Michael Chiarello's bean cassoulet with fennel-spiced chicken. I've made that one before (it's excellent!) and loved the very flavorful, simple rub. GREAT tip on getting the knuckle meat out! I find it to be so flavorful, but always a battle to get nice chunks out....I went got 4 lobsters just to try this!

This recipe was a big hit! Didn't have the preserved lemon (couldn't find it in my local store) so I just left it out....not sure how much different the taste would be.
