"I made these tonight. The cookies tasted good though I am still on the lookout for the best chewy PB cookie - this was not it. I made ice cream sandwiches with them (left out the jam). They didn't really work- the cookies did not flatten at all in the oven and so the sandwiches were impossible to eat, with two thick cookies. I tried to flatten them before baking but they cracked around the edges so I couldn't get them as flat as I needed to. Perhaps my cookies had too much dough (for me the recipe made 16 cookies). Also to get a sandwich that really stays together you should probably freeze again after making the sandwich. "
