My Activity

Reviewed Orzo Stuffed Peppers

"Absolutely perfect and delicious! I am not a huge veggie lover, but this is the most tasty way I can think of to get in my veggies! Great left over, too. So flavorful. You will not miss the old-fashioned recipe with hamburger it at all!!!! ""

Reviewed Mahi Mahi Lettuce Wraps

"To die for!! I thought this looked like it would taste good and it seemed super healthy. Went way beyond my expectations though! I LOVE this recipe. It is delightfully tastey -- a celebration of flavor in my mouth. Great combination of textures and flavors. I didn't even think about how healthy it was, I was enjoying it so much. Quick and easy to make.

Reviewed Pineapple Boat Shrimp with Fruit Salsa

"Lots of work involved. Turned out to look absolutely beautiful and stunning. I had to take pictures! But it honestly was not worth all the labor involved for the end result. It was very average tasting. The ingredients sounded like they'd be great together. I love exotic foods. But it really didn't taste like anything special or out of the ordinary.

Reviewed Coconut Cilantro Rice with Peas and Cashews

"I was disappointed in this recipe! I thought the ingredients sounded fabulous but in the end it really lacked flavor.

Reviewed White Bean and Chicken Chili

"Fantastic!! I have made this several times and it consistently comes out great. I make a half recipe and it still makes 5 hearty sized servings. Tastes great left over, too. I don't use chili powder, I just put in some extra chili flakes. I also don't use parsley... I top it with chopped cilantro and chopped green onion instead. Also a shot of worcestershire sauce on the ground chicken gives it more depth of flavor. I've always used Kale as the green and it turns out delicious.
