Just pulled this out of the oven. Like several others used a boston butt roast about 3 1/2 pounds. The 3 hour cooking time was good. Only made the Chipotle Ketchup so far and it is very spicy. Only simmered for 1/2 hour as it seemed pretty thick from the beginning. Going to buy a chipotle ketchup to compare the taste. It makes a lot but only those that like spicy food will enjoy. We do so OK here.
