Reviewed Rockin' Roast Pork Shoulder with Spanish Rice

"Just pulled this out of the oven. Like several others used a boston butt roast about 3 1/2 pounds. The 3 hour cooking time was good. When they browned it at the end on the show they said 450 but the website says 400. So did it @ 425 for 10 - 15 minutes. Also used fresh parsley in the sofrito instead of cilantro as hubby hates. The sazon seasoning "

Reviewed Rack of Pork with Pear Apple Compote

"Wow meal fit for royalty! First of all be sure and use kosher salt with the lower sodium content like Diamond as some are much higher like table salt. The water mixture that is boiled takes about double the time to cool down. Brined the roast for about 10 hours seemed to be long enough. Had to cook the 2 lb. roast for 30 minutes per pound for 150 degrees and needs to be turned halfway. Let it rest for about 30 minutes this time and still juicy... so succulent! Didn't make the compote but plan to as there will be a next time. Thanks really enjoyed!

Reviewed Meatloaf Sandwich

"Only made the Chipotle Ketchup so far and it is very spicy. Only simmered for 1/2 hour as it seemed pretty thick from the beginning. Going to buy a chipotle ketchup to compare the taste. It makes a lot but only those that like spicy food will enjoy. We do so OK here.

Reviewed Mini Banana Beignets

"Okay was excited to try this as change from the usual banana bread. Well they were very tasty would give them five stars for that. However like another reviewer said they did not stay together in a ball like the picture. Found they had to be trimmed. Have tried recipes with rolled dough that produced nice and round balls. Also the frying time not enough at 15 seconds per side raw batter inside! About 1 minute total did it. So end result winning recipe for taste but not for cooking method/instructions. Will stick with the other kind in the future.
