Reviewed Pecan Squares

Reviewed Raisin Pecan Oatmeal Cookies

"This is a good lunchbox cookie; it's relatively healthy and satisfying while not too bad for you. I subbed 1c. all-purpose flour and 1/2c. whole wheat flour with no compromise to texture or flavor. Also, I used 1c. dried cranberries and 1/2c. chopped dried apricots instead of raisins, and soaked them in 1/2c. hot orange juice before adding to the batter...this ensures that the fruit is still moist and chewy after they bake. The orange is a nice compliment to the oatmeal and pecans as well.
